My wonderful sister-in-law sent me a recipe for cookie dough bites. They looked so good! And, I could eat exactly two of the ingredients that were called for. Honey and vanilla …. So, now that I had cookie dough bites on the brain, I set about creating a completely AIP version of my own. I’m very pleased with how they turned out! They taste like vanilla cake batter cookie dough. Cake batter – mmm! Another favorite from my past!
(Bonus – these are actually really good for you, too!)
Cookie Dough Bites
Mix everything together and roll into 8 balls. Keep in the fridge.
** A note about tigernut flour; Its not a nut. Its a small tuber. Tigernuts are an excellent form of resistant starch. (Feeds the good bugs in your intestines.) It also has a fat content very similar to virgin olive oil, so how cool is that? Healthy fat and good bug food, all in one little tuber. I sometimes make milk from the tubers and then use the pulp to make flour. They can be found on Amazon.
**** Because resistant starch feeds the gut flora, ( very good thing) too much at once can cause gas or even bloating. So, easy does it. Work up slowly. Its not a sprint, its a marathon. Your gut will love you for it in the end.
