AIP Pasta/Pizza sauce

Since nightshades are not allowed on the AIP diet, all tomato based goodies are out. This called for scouring the Internet and lots of trial and error. It took some searching and then taking a little from here and a bit there, and adding my own touch, for me to be happy with this sauce. It’s amazingly authentic. Seriously, I had a hard time believing it had no tomatoes in it, and I made the sauce! Bring on the spaghetti (squash)! Or zoodles. Zoodles are really good.

 

AIP No-Mato sauce

2 c cooked cubed butternut squash
1c cooked chopped carrots
2 T oil
1 medium onion diced
2 minced garlic cloves
2 t salt
2 T Italian seasonings
2 t coconut aminos
1 t molasses
1/2 c bone broth, preferably chicken
1 – 1 1/2 c dry red wine
1/4 c lemon juice
Sautée the garlic in oil until soft. Transfer to a blender. Add the rest of the ingredients and pulse until you reach your desired consistency. Pour into a pot and simmer for about 20-30 minutes. You can add more wine if you feel it needs more of that acidic flavor. The alcohol will cook out.  This sauce freezes well and I had great success canning it for easy future use.
