Dairy free ranch dressing?? Yep, not kidding. Its true. Its good. Its happening. Well, it is in my house. And now I’m sharing the recipe so it can happen in your home, too. Have at it.
AIP Ranch Dressing.
1 c avocado oil find here
1/4 c palm shortening ( more or less depending on how thick you like it)
1 T lemon juice
1/2 t onion powder
1/2 t garlic powder
1 T dried parsley
1/2 T dried dill
1 T green onions or chives, sliced thin
1/2 t salt or to taste
Wisk all the ingredients together until the mixture is smooth and creamy. You and can use your blender for this if you want. Store in the fridge. You might need to stir it up before each use if it is too thick or too runny. I like mine a bit thicker, so it has never been a problem, but I know a lot of people like a thin dressing.
I used most of it to make a yummy chicken salad, which is why there is a giant picture of a chicken salad sandwich, instead of a lovely jar of creamy dressing. I’m sure you can deal with it, right? So, go whip it up, and enjoy!
