Chocolate Pudding ( high fat, dairy and refined sugar free)

Raw Chocolate Pudding!

Mmm! Chocolate pudding!  I created this marvelously delicious treat from the need for something quick and easy, and designed to give my whole body a helping hand.  It doesn’t cause my Lyme nausea to rear its ugly head, and its nourishing for the whole body, including the thyroid and adrenals. Happy hormones! Its packed with tons of healthy fats and protein, as well as gut healing collagen.

This pudding is so healthy, that I have no problem serving it to my family just about every day. We like it for dessert after supper, but we really love it for breakfast! What better way to start your day off than with chocolate?! AmIright?!  (Seriously though, this is actually really helps my energy levels when I have it for breakfast. It gives my thyroid and adrenals a nice little good morning hug to start their day off right. And I like when their day starts off right!)

The texture is thick and silky smooth. Its so rich, chocolatey and creamy, you’d never know that its completely dairy free and raw! And no, you can’t taste the avocado at all! Honest!

Chocolate Pudding

1 ripe avocado
1 small – medium banana
6 raw egg yolks – farm fresh, organic, free range  (we have our own chickens)
1/4 c raw honey or maple syrup
1/3 c cacao or dutch process cocoa
1 t vanilla
2/3 c coconut oil
4 scoops collagen find here
pinch of Himalayan Pink saltPlace all ingredients in a high powered blender or food processor. Blend until its completely smooth and creamy. Wait five minutes for it to thicken slightly and serve. Or, you can store in the fridge for several hours before eating. Its best eaten the same day, but is still very good the next day.
Serves four.  (Trust me, its very filling. A little goes a long way!)
