Broccoli Soup…. in the Vitamix.
I must say, I am loving my Vitamix! I love how quick and efficient it is. I love its versatility. We have made tons of delicous goodness in this powerful machine, and I will be sharing many of them with you, but the first one I want to spotlight is the soup we made a few weeks ago. My family has always enjoyed broccoli soup, but now….. Now its been taken to a whole new level. The first time I made it I felt the need to call my mom and sing its praises, gushing all over the phone like a nincompoop, until I’m sure my mother wished I would put a sock in it. Its just that good.
The Vitamix has a soup setting and I used it to make this soup, but I think it would work in a very similar manner with a food processor if you don’t happen to own a Vitamix. You will want to heat the soup up after pureeing it in the food processor, but other than that, the recipe should be the same.
Ultra creamy, velvety smooth, light and almost fluffy, yet incredibly filling and satisfying. It has a nice pop of flavor without being obnoxious. This is broccoli soup after all. Its comfort food.
2/3 c swiss cheese cubed
1/3 c chedder cheese cubed
2 c milk
1 t salt
1/2 t garlic powder
1/2 t onion powder
2 large bunches broccoli steamed until tender.
Toss all ingredients in blender and set to soup function. OR puree in food processor until completely sooth and creamy. Cheese should be melted and incorporated when you are done, so if need be, maybe heat up, then return to the processor for a quick pulse or two… For the Vitamix, simply wait till the soup function is complete and then serve immediately. Leftovers reheat beautifully. If there are any!
*The Swiss cheese is what really adds that special pop of flavor to the soup, so please don’t skip it. Or you could use any other sharp flavored cheese in its place.
**Make it extra special by topping with fresh parsley, green onions, and/or poached eggs.
